INGREDIENTS

 

Turkey Meatballs:
1 pound ground turkey
1 teaspoon Adobo seasoning
1 teaspoon salt
1 teaspoon Everyday seasoning (Trader Joe’s brand)
1/4 cup finely chopped spring onions or shallots
2 cloves garlic, minced
1 small bell pepper each (green, red, and yellow), chopped
1 chopped habanero or scotch bonnet pepper
1 cup parsley, finely chopped
4 tablespoons panko breadcrumbs
1/2 cup Teriyaki sesame sauce
1/4 cup water
Olive oil, for cooking
4 cloves mushrooms (shiitake), chopped
1 can of black beans
1 teaspoon honey


Tri-color Quinoa:
2 cups cooked tri-color quinoa
1 1/2 cups water
1 tablespoon butter or 1 teaspoon olive oil


Spring Vegetable Mix:
1 cup arugula, spinach, lettuce, purple cabbage, chopped
1 avocado
1 tablespoon olive oil
A squeeze of lemon

INSTRUCTIONS

In a large mixing bowl, combine the ground turkey, Adobo seasoning, salt, Everyday seasoning, spring onions, garlic, bell peppers, habanero pepper, parsley, panko breadcrumbs, Teriyaki sesame sauce, and water. Mix until well combined, then form the mixture into meatballs.


Heat a drizzle of olive oil in a skillet over medium heat. Add the meatballs and mushrooms, cooking until the meatballs are browned and cooked through.
In a separate pot, combine the cooked tri-color quinoa with water and butter or olive oil. Cook according to package instructions.


Assemble the spring vegetable mix by combining arugula, spinach, lettuce, and purple cabbage. Add in the avocado, olive oil, and a squeeze of lemon, tossing to combine.


For the final touch, mix the black beans with a drizzle of honey for a hint of sweetness.
